COOK: Use fresh or dried with ghee, garlic and ginger. Let this be the base to add vegetables or meat. Oregano pairs especially well with stewed tomatoes, or it can be added to a good quality olive oil as the final touch on fresh rotis.
TIPS: If using fresh oregano, wrap in a moist paper towel & then in plastic wrap so it keeps longer. Fresh oregano will have a more potent flavor than dried, since more of its essential oils are remaining. Be aware of this when substituting one for the other in a recipe.
