Pickled Red Onions

These onions can stay in the refrigerator for up to 3 months - the beets are in the brine to add bright color. The onions are good for topping off sandwiches and salads.  

makes ~2.5 cups


2 cups of sliced red onions

2-3 whole star anise

5-6 whole red chilis

2-3 large sticks of cinnamon

1 small beet, unpeeled and sliced

¼ cup vinegar

1 ½ cups of water

½ tsp salt


Combine all of the above ingredients in a storage container and refrigerate for 2 days. The onions will turn a bright pink and the spices will infuse into the onions.

  • Pickling onions requires only salt, vinegar, water, and vegetable. Keep it as simple as that or spice it up.
