Mint Walnut Chutney

Chutneys are a versatile condiment so use wherever you want added flavor. Mint, coconut & toasted walnuts make a fantastic combination. The mint in this chutney causes it to oxidize rather quickly, so to make sure it holds its green color we added some acid (lemon juice). Also, right after it is made, cover it with plastic wrap that touches the surface of the chutney so as to not allow any oxygen to come in contact with the chutney. If you find that it has oxidized, you can simply skim the top layer off with a spoon.
