Lassi is a traditional yogurt and spice drink from India prepared in homes and sold in street stalls all over the country. The most basic ones are the sweet lassi, with sugar and cardamom, and the salty lassi with cumin and salt. At the other end of the spectrum is the exotic Bhang lassi laced with cannabis commonly consumed during Holi, the festival of colors. This mint lassi is salty yet slightly sweet. Mint leaves add a cool floral touch.
makes 4 small servings
2 cups plain yogurt
1 cup water
1/2 teaspoon toasted ground cumin
1/4 teaspoon ground black pepper
1 teaspoon salt
1/4 cup mint leaves
In a blender, purée the yogurt, water, cumin, black pepper, salt and mint leaves until smooth. Pour into glasses and serve with a pinch of cumin & sprig of fresh mint.
