Kejriwal Egg Bun

Eggs Kejriwal is named after Mr. Devi Prasad Kejriwal, a Jain Indian man. During colonial times he would come to his favorite country club in Bombay and order this egg and cheese sandwich without his family’s knowledge. The eggs had to be buried under a mask of melted cheese. The dish became so popular that the club named the egg sandwich after Mr. Kejriwal. Use a cheese of your choice – we recommend a sharp cheddar or raclette.  

makes 2 sandwiches


    2 round buns 

    2 Tbsp butter, softened 

    1 cup cheese, grated 

    1 serrano pepper, minced  

    2 Tbsp red onion, minced

    2 eggs

    A pinch of salt and red chili powder 

    8-10 cilantro sprigs



    1. Preheat the oven to 350F. 
    2. Slice the buns into half and spread butter on all four halves. Lay them cut side up and spread the cheese evenly on top. Top with serrano peppers and red onions. Place into the oven. Cook the buns in the oven until the cheese is melted and bubbly (3-4 minutes). 
    3. Then heat up a skillet and fry the two eggs sunny side up. Sprinkle with salt and red chili powder. Remove the buns from the oven and place a fried egg on top of the bottom half of the bun.  
    4. Top with cilantro sprigs, close the sandwich & enjoy! 

    ideas / variations

    • This sandwich also works well open faced  - double the amount of cheese under the eggs if doing so. 
    • Instead of buns, use thick slices of brioche or challah bread. 
    • Spread mustard, mango pickle or cilantro chutney on the bun after the butter.
