This salad is good on its own and also makes an awesome side dish for grilled or roasted meats.
makes ~3 cups
- Lay the tomatoes on a serving platter. Scatter the mango on top of the tomato. Sprinkle with salt, ground cumin, and chili powder.
- Heat up the mustard oil & pop the coriander seeds. Drizzle on the tomatoes and mangoes. Garnish with chopped pistachios and cilantro sprigs.
ideas / variations
- Add mild cheese like burrata or mozzarella.
- Put on top of warm toast as a starter or toss with greens to make a salad.
