6 large onions, caramelized


  1. Pulse the caramelized onions in a food processor until smooth.

At this point you can:

  1. Store the onion puree in a tight fitting container with a thin layer of oil on top (which will be flavored and can be used in later cooking!)
  2. Distribute into small plastic bags and freeze until further use.
