Black Pepper Marinade

For the flavor of pepper to really stand out it has to be fresh. Buy whole peppercorns & grind them in a spice grinder or blender on high speed.   

makes ~3.5 cups


⅓ cup black pepper

2 cups yogurt, plain whole milk

½ cup EVOO

½ cup drained ginger purée

1 Tbsp salt

¼ cup rosemary, finely chopped 


  1. Mix all ingredients together in a bowl.
  2. For a turkey, salt first and bake until it is halfway done. For the last half of the cook time, brush the turkey generously with the marinade (cook uncovered). 
  3. For chicken, you can put the marinade on right at the beginning, since it takes much less time to cook.
